Something Fresh is Brewing at St. Jacobs Outlet Mall

Stockyards Beverage Company is expanding and revamping a large portion of the St. Jacobs Outlet Mall.

The company is based in Kitchener and will launch a new office during the autumn. The brewery will expand to 80,000 square feet and output will increase from 1,500 to 8,000 hectolitres as a result of the move. (A hectolitre is equal to 100 litres.)

The company owned by Ignite Brands will become 50-50 partners in Stockyards with the mall, helping to increase the client base of the present brewery housed within Graffiti Market, another one of its restaurants.

It’s a long way from the Catalyst 137 location in Kitchener, where Red Circle Brewing and Red Circle Coffee first launched in 2018. Stockyards Brewing and Stockyards Coffee were renamed as Stockyards Beverage Company as a result of the merger.

“What we discovered is that people aren’t always aware [of the brewery].” They’re headed to Graffiti Market instead of Stockyards Brewing.  We are not concerned that we will lose consumers. “We believe we will shift our customer base and focus to our brewery and St. Jacobs while maintaining our presence in Graffiti Market,” said co-owner Ryan Lloyd-Craig.

The project’s concept has been in the works since before the epidemic, and building began around a year ago.  Ignite Brands is also trying to extend its product offerings at The Beer Store and the LCBO.

“The more beer you make, the more beer you sell.” The farmers’ market, the accessibility of the market to neighbouring hotels, and the total magnitude of the project – we’re attempting to establish a world-class destination brewery in Ontario. “We want to get it right the first time, so we’re taking our time,” Lloyd-Craig stated.

The brewery and retail store are only the first part of the project; phase two will include a beer hall and terrace, which will seat 130 people inside and another 200 outdoors and is expected to open next summer. The last phase will include an event area and a second restaurant.

Along with its beer choices, Stockyards also sells coffee, including distinctive blends and a single origin series. According to Lloyd Craig, it is unusual for breweries in Ontario or even Canada to sell coffee.

“Some breweries in the United States do it.” “I’m not aware of anyone doing what we’re doing in Ontario or Canada, but in our new space, we’ll have our coffee roaster and we’ll try to incorporate it into our beer lineup,” he added.

While there may be some rivalry in St. Jacobs, Lloyd-Craig believes that the magnitude of Stockyards’ business will set them apart.

“In the summer, you’ve got the draw from the farmers’ market on Thursdays, Saturdays, and Tuesdays.  The hotels are within walking distance. “It’s a fantastic addition to the St. Jacobs Farmers’ Market district,” he remarked.
