Stephen Tyson and Yves St. Amand spent years managing Toronto establishments before deciding to merge their experience with their passion for sustainability.
They are now working on Canada’s first carbon-negative brewery which will be located in Peterborough, Ontario. With climate change on the forefront of the brewing industry, these brewers are in the process of creating a beer that will help solve the energy- and water-intensive drainage.
Karbon Brewing is hoping to reverse this trend by designing a brewery with sustainability in mind with every step of the way.
“I really like the challenge of flipping the focus from ‘How do we become this big brand by selling the most beer possible, and then worrying about sustainability?’ to ‘Let’s put sustainability first’ and ‘How do we do a brewery right?’” says Bernardo Zamora, Karbon’s brewmaster.
Right now the process is watching Karbon’s production and maintaining its green brewing habits. Zamora may be comforted to know that sustainability experts say large, well-established beer companies tend to lead the pack when it comes to sustainability within the industry.
